Summary:
"Hawai'i chef Sam Choy had his first bite of 'ulu as a child growing up in Lā'ie on O'ahu's North Shore, in a neighborhood where everyone had a breadfruit tree in their yard. He remembers his dad baking the 'ulu, then smearing it with butter, brown sugar, and cinnamon. It was like a cinnamon roll-what kid wouldn't fall in love? Sam learned methods of preparing 'ulu from both family and neighbors who originated from all over the Pacific, bringing to Hawai'i their cherished traditions. It's a part of his upbringing that he's carried throughout his professional career. Sam Choy's 'Ulu Cookbook is a rare collection devoted to a truly Hawaiian staple food. The recipes are Chef Sam's own, those of his friends, and of the Hawai'i 'Ulu Cooperative, who partnered in creating this book. The book comes at an ideal time for home cooks now that the co-op has helped to increase supply and make frozen, recipe-ready 'ulu available throughout the islands and even by mail order. Here are recipes both traditional and contemporary: 'Ulu chips and a multitude of dips to serve with them. Salads that pair 'ulu with other island favorites like hō'i'o (fern shoots), 'ōpae (red shrimp), and hearts of palm. Soups made substantial and creamy through the magic of 'ulu. Plus burgers, croquettes, hash and more-including a host of desserts, like a decadent sour cream cake (with 'ulu, of course). Not to mention Chef Sam's secret (until now) for recipe for braised short ribs served over 'ulu grits! Come to know this valuable ingredient which is so versatile and so delicious that it belongs in kitchens everywhere"--
